History of saffron

The history of the use of saffron dates back thousands of years, 2500-1500 BC.

Saffron has been used by different nations for different purposes, such as a spice, dye, perfume, and as a therapeutic agent for a variety of diseases in medicine.

The origin of saffron is said to be in the Middle East, in ancient Greece and Persia.

In Iran, saffron was first cultivated in the Zagros and Alvand mountains during the kingdom of Media (708-550 BC). It was used with wine to prevent hangover, to treat erysipelas, and as a diuretic, anti-inflammatory and sedative.

Today; Iran has the largest share of production and covers between 80 and 90% of the world’s demand for saffron
